Ingredients
| 2 tbsp | Olive Oil |
| 900g (2 lbs) | Lamb, cubed |
| 1 | Onion, diced |
| 4 | Garlic, minced |
| 1/4 cup | Orange Juice |
| 2 cup | Broth |
| 1 cup | Crushed Tomatoes |
| 1/4 cup | Pitted Dates |
| 1/4 cup | Dried Apricots |
| 2 tsp | Cumin |
| 1/4 tsp | Cayenne Pepper |
| 2 tsp | Ginger, minced |
| 1 tsp | Sea Salt |
| 1/2 tsp | Black Pepper |
| 1/2 cup | Cilantro |
Instructions - Instant Pot
- Press Saute button. Heat Oil and add Lamb and Onion. Cook 3-5 minutes. Add Garlic, cook 1 minute
- Add Orange Juice and Broth, stir to clean edges of pot. Add remaining ingredients
- Press Meat button, cook for 35 minutes. Allow natural release
