Ingredients
1 cup | Dry Quinoa |
2-3 cups | Broccoli |
1 cup | Cooked Chicken, shredded |
1/2 cup | Carrots, shredded |
1/2 cup | Kalamata Olives, chopped |
1/2 cup | Bell Peppers, sliced |
1/4 cup | Parmesan |
1/2 cup | Feta Cheese |
1/2 cup | Olive Oil |
2 tbsp | Lemon Juice |
1/2 tsp | Salt |
1/2 tsp | Ground Pepper |

Instructions
- Cook Quinoa, toss with fork and let cool for 30 minutes
- Add Broccoli, Chicken, Carrots, Olives, Bell Pepper, Parmesan, and Feta. Toss to combine
- Dressing: Mix Olive Oil, Lemon Juice, Salt, and Pepper. Pour over salad
- Serve room temperature or chilled
