Ingredients

1 tbspOlive Oil
1Large Onion Diced
1Red Bell Pepper Chopped
2 tspDiced Garlic
1 tspDiced Ginger
900g (32oz)Cubed Butternut Squash
1Apple Chopped
1 tspSage (or rosemary, thyme, parsley)
1/8 tspChili Powder
1/4 tspSea Salt
3 cupChicken Stock
90g (3oz)Cream Cheese
1/3 cupParmesan Cheese

Instructions

  1. Set Instant Pot to Saute
  2. Add Olive Oil, Onion, Pepper, and cook for 4 minutes
  3. Add Garlic, Ginger, cook for 1 minute
  4. Turn off Saute
  5. Add Squash, Apple, Spices, and Stock
  6. Set to Manual - High Pressure for 5 minutes, quick release when done
  7. Immersion blend until pureed, add cheeses and blend until smooth
