| 1 can | Diced Tomatoes |
| 1 can | Coconut Milk |
| 2 cups | Chicken Broth |
| 1 | Onion |
| 2 | Zucchinis |
| 2 | Carrots |
| 2 tsp | Garlic Powder |
| 2 tsp | Chili Powder |
| 2 tsp | Oregano |
| 1 tsp | Paprika |
| 1 tsp | Cumin |
Instructions - Instant Pot
- Add all ingredients to Instant Pot except for Coconut Milk
- Cook at high pressure for 18 minutes, allow for natural release for 10 minutes
- Pull out chicken and dice
- Add chicken and coconut milk and saute to heat
- Serve with Avacado, Tortilla Strips, Shredded Cheese
