Ingredients

1 tbspOil
1 cupCarrots, diced
1 cupOnions, diced
1Sweet Potato, diced
1Cauliflower Head, chopped
2 tspGarlic, minced
1 tspGinger, minced
2 tbspCurry Powder
1 tspTurmeric
1 canCoconut Milk
4 cupBroth

Instructions - Instant Pot

  1. Set Instant Pot to Saute, add Oil, Carrots, and Onions. Cook for 2 to 3 minutes
  2. Add Sweet Potato, Cauliflower, Garlic, Ginger, Curry Powder, and Turmeric. Stir well
  3. Add Coconut Milk and Broth, stir well.
  4. Seal lid and set to Soup, use natural release
  5. Puree and serve
