Ingredients
2 tbsp | Oil |
1 | Onion, diced |
450g (1 lbs) | Carrots, diced |
2 | Garlic Cloved, minced |
3/4 tsp | Turmeric |
2 tsp | Curry Powder |
1/2 tsp | Ground Cumin |
1/2 tsp | Sea Salt |
1 | Potato, diced |
5 cup | Broth |
1/2 cup | Apple Juice |
1 tbsp | Lemon Juice |
Instructions - Instant Pot
- Press Saute. Add Oil, Onion, Carrots, and Garlic. Cook for 5 minutes until Onion softens
- Stir in Turmeric, Curry Powder, Cumin, and Salt. Cook for 1 minute
- Add Potato, Broth, and Apple Juice
- Press Manual and set for 5 minutes. Quick release when done
- Puree soup and blend in Lemon Juice
