Ingredients

2 tbspOil
1Onion, diced
450g (1 lbs)Carrots, diced
2Garlic Cloved, minced
3/4 tspTurmeric
2 tspCurry Powder
1/2 tspGround Cumin
1/2 tspSea Salt
1Potato, diced
5 cupBroth
1/2 cupApple Juice
1 tbspLemon Juice

Instructions - Instant Pot

  1. Press Saute. Add Oil, Onion, Carrots, and Garlic. Cook for 5 minutes until Onion softens
  2. Stir in Turmeric, Curry Powder, Cumin, and Salt. Cook for 1 minute
  3. Add Potato, Broth, and Apple Juice
  4. Press Manual and set for 5 minutes. Quick release when done
  5. Puree soup and blend in Lemon Juice
