Ingredients

2Chicken Breast, cubed
1Onion, chopped
1Red Pepper, chopped
3Celery, chopped
1Carrot, chopped
3Garlic, minced
1 to 2 tbspGinger, minced
1/4 cupButter
1/4 cupRice
1 1/2 tbspFlour
1 1/2 tbspCurry Powder
4 cupBroth
1 canCoconut Milk
tasteGround Pepper, Thyme, Celery Salt

Instructions

  1. Cook Chicken with spices to taste, set aside
  2. In large pot melt Butter with Garlic, Ginger, and Onions. Saute for 2 to 3 minutes
  3. Mix Curry Powder and Flour to pot, cook 2 to 3 minutes on low heat
  4. Add Broth and Coconut Milk, bring to slow boil under medium heat
  5. Add Red Pepper, Celery, and Carrots. Lower heat and simmer for 15 minutes
  6. Add Chicken, Rice, and Spices to taste. Simmer for 10 minutes
